I love Bossam! What a great twist by cold smoking the belly pork. What is your preferred method of removing any hair on the skin of the pork belly?

What’s the internal temp of the pork belly when you pulled it off the cooker after cold smoking? And how long did it take on the cooker?

You aren't trying to do something to over-sensationalize or do fusion, it feels much more true to the essence of the culture, while still bringing a new feel to it. I would love to see a Korean pantry essentials video, where you show us ingredients and spices that are staples.

A non sweet bacon would be nice. All the recipe I see are maple or brown sugar based. None do the pepper crusted plain smoked one
